Lentil Soup

Lentils are a powerhouse of nutrition. They are a good source of potassium, calcium, zinc, niacin and vitamin K.  Lentils are particularly rich in dietary fiber, lean protein, folate and iron.  Lentils are great for you and your growing baby!

Ingredients:

2 tablespoons olive oil

1 cup finely chopped onion

1/2 cup finely chopped carrot

1 pinch of Himalayan sea salt

1 pound Organic lentils, picked and rinsed

1 cup peeled and chopped tomatoes (you can use Organic canned tomatoes)

2 quarts chicken or vegetable broth

One of my baby’s favorite recipes! 

Directions:

Place the olive oil into a large 6-quart Dutch oven and set over medium heat. Once hot, add the onion, garlic, and salt for approximately 5 minutes. Add the broth, lentils, tomatoes, carrots, and stir to combine. Increase the heat to high and bring just to a boil. Reduce the heat to low, cover and cook at a low simmer until the lentils are tender, approximately 45 minutes. 

*Puree for baby’s under 1 year for easier feeding.
