Quick and easy, these sweet potato bites are packed with Vitamin A, antioxidant and anti inflammatory properties.
1/2 a sweet potato or whole depending on preference.
Peel potato and slice into circles
Cut into 1 inch pieces
Coat front and back with organic olive oil
Place pieces onto foil or baking sheet
I use a toaster oven for quickness. Place sheet into toaster oven at 300 degrees.
Flip pieces after 7 minutes and cook for another 5 minutes.
Take out and let cool.
Luna eats at least a 1/2 of sweet potato in one sitting! Yum!
