Super Easy, Super Healthy, Roasted Chickpea Snack

Garbanzo beans (chickpeas) like other legumes are very high in fiber.  The difference with garbanzo beans in comparison to other beans is that the fiber is about 75% insoluble, meaning it goes undigested all the way throughout the last bit of your colon.  Lowering the risk of colon cancer.  

These beans have an amazing amount of antioxidant phytonutrients and anthocyanins, reducing risk for heart disease, providing support for blood vessels walls, lowering total cholesterol levels.

Garbanzo beans improve blood sugar regulation and increase food satiety (leaves us feeling full and eliminates hunger and appetite).  Great option if you’re trying to fight those pesky food cravings!

They contain significant amounts of fiber, manganese, phosphorus, folate, protein, iron, copper, zinc.

 

Here’s the recipes:

Preheat oven at 400 degrees

Drain one can or box of organic chickpeas and blot dry (I use Wholefoods boxed chickpeas or Eden Organic)

1 tablespoon of olive oil

1 tablespoon coconut oil

2 teaspoons paprika

1 teaspoon onion powder

1 teaspoon garlic powder

1 teaspoon cumin

1/2 teaspoon cayenne pepper (optional)

Pinch of Himalayan sea salt (optional)

Mix well all of the ingredients in a bowl and pour onto a baking sheet or sheet of aluminum foil

Bake for 40-60 minutes.  Keep a close eye on them after 40 minutes, so they don’t burn.
