Baked Salmon With Pesto

on April 2, 2014

Tonight, I made Luna and myself Wild Caught Alaskan King Salmon.  First, let me explain the difference between farm raised and wild caught for those who don’t know… It’s important and quite a difference!

Farmed Raised

Makes up 80% of salmon on the market

Raised in a confined pen dosed with antibiotics to prevent spread of disease and copper sulfate to rid the algae off the nets.

Fed a diet of formulated protein pellets making them fatter, but not healthier – higher Omega 6 ration than Omega 3s. The fish meal pellets contains dioxins, PCB’s, fire retardants, pesticides, and canthaxanthin (the dye that makes gray farmed raised fish “wild” pink and causes retinal damage!)

Contains 16 times more cancer linked PCBs than wild caught.

Wild Caught

Naturally pink

32% less calories than farm raised

Contains more calcium and iron

Higher Omega 3’s at least Wild Alaskan King Salmon

Cheaper wild salmon spend half their lives in hatcheries before being released, making them exposed to toxins and having a lower Omega 3 ratio.

True wild salmon makes up about 20% of the market and is expensive – solution is to buy quality not quantity and look for Alaskan over Northwestern

Majority of canned salmon is wild because farm raised does not can well – although, it does not contain as much good fats as other kinds.

Here’s how I made dinner… Very easy…

2 pieces of Wild Alaskan King Salmon

2 Tablespoons of pesto (I used Bear Pond Farms PremiumBasil Pesto)

1 teaspoon coconut oil

Sprinkle of garlic powder

Sprinkle of Himalayan sea salt and pepper

Preheat oven to 400 degrees

Grease spots on baking sheet or aluminum foil or grill where fillets are placed

Sprinkle garlic powder, salt and pepper on fillets

Place in oven for about 12-15 minutes

Coat 1 tablespoon of pesto on each fillet and place back in oven for 3 – 5 minutes

Place on plate and serve!
