Quickie Healthy Dinner

Sometimes there’s not enough time in the day to make a home cooked meal.  I still keep it healthy for those emergency, quick made meals.  Hilary’s Adzuki Bean Burger caught my eye in the freezer section of Mrs. Green’s.  It’s all organic and ingredients are all pronounceable! It comes in packs of two.  I placed one pattie in the toaster oven for 5 minutes on each side – quick!  While that was heating up, I chopped up a half of an avocado and a bunch of cherry tomatoes, drizzled with olive oil and Bragg apple cider vinegar. I threw everything together in a plate and voila!  It’s pretty good as a quick fix.  If you do not like cumin, this is not for you!

For the babes, it’s great finger food because the patties just crumble and the tomatoes and avocados can be chopped smaller.

Think smart, be healthy, no excuses!
