Homemade Coconut Yogurt -New Snack For Baby Luna

I am a super, freakishly healthy person and I raise Luna (2 years old) in the EXACT same manner.  I instill in her what is proper nourishment and what is decaying to the body.  I tell her ‘BLEH” to anything processed or that’s crap – she get’s it and repeats it.  I explain that foods with sugar rot teeth and hurt bellies.  I can’t express enough how important it is to start proper, healthy, eating habits from the very beginning of a child’s life.  It makes a difference!

We avoid dairy because this is my preference.  It is inflammatory to the body, difficult to digest, allergy sensitive.  If you do have dairy as part of your regiment, PLEASE make sure it’s organic!  Otherwise, you and your child are ingesting hormones, antibiotics, pesticides, all wreaking havoc on the body.  

I try to substitute alternatives for any food I don’t give to Luna.  For example, I will not give her yogurt made of milk or soy – the substitute is coconut yogurt.  Just as creamy, just as yummy!  No missing out on anything here!  Luna loves it and isn’t missing out.  Or you can make our own!  Here’s the recipe:

 

COCONUT MILK YOGURT

Ingredients:

2 cans full fat coconut milk (I use Native Forest (BPA free can)

2 tablespoon lemon juice

4 Medjool dates soaked for an hour or more and pitted

2 Probiotic capsules, contents emptied, OR 1 teaspoon probiotic powder

Pinch Himalayan sea salt

Directions:

1. Place can of coconut milk in the fridge overnight. Next day, scoop out the solidified part from both cans and place it into a food processor or blender along with liquid.

2. Add remaining ingredients and blend yogurt till smooth.  

3. Place in a glass container and leave slightly uncovered, place in fridge to ferment.  Next day stir and it should have thickened.  The more days you leave it, the more it will ferment.  I normally let it ferment at least 24 hours – 48 hours.  

4. Add berries, nut butter, granola or sprinkle some sunflower seeds.
