Benefits of Homemade Coconut Yogurt

I recently posted a recipe for homemade coconut yogurt and actually got to make it today!  

The first picture is the full fat coconut milk solidified after being in the fridge overnight – it actually tastes good as is.  

The second pic is the end product with:

-1 can Native Forest FULL fat coconut milk

-2 Medjool dates

-2 tbsp squeezed lemon juice

-1/2 tsp probiotic powder or 1 capsule opened

-pinch of Himalayan sea salt…

OMG, this is soooo good!  Tomorrow, I will purée blueberries to mix with this yogurt for Luna.  You can actually blend in any fruit to add different flavors and you can also freeze it into “ice cream” or ice pops.

Why use coconut and not go for the regular dairy yogurt?…

1- It’s probiotic-rich, leaving your gut loaded with beneficial bacteria that will greatly help your digestive system.  

2- Used in modern medicine to help kill the fungi and yeasts that cause candida overgrowth, thrush and diaper rash.

3- Reduces inflammation and improves bowel function.

4- Good source of B12, magnesium and calcium.

5-  Helps with better absorption of vitamins and minerals.
