Healthy French Toast, Healthy Snacks And A Happy Sunday

I love Sundays because I get to spend the entire day with my daughter, Luna.  I wanted to make something a little special for Luna, so we made a healthy version of french toast.  She was my little helper!

Healthy French Toast (1 serving)

1 Slice of Ezekiel bread
2 Egg whites
1 whole egg
Pinch of cinnamon
Ghee to grease pan


-Place eggs in a plate and beat
-Dip Ezekiel bread and let it soak for a few minutes on both sides
-Grease pan with ghee, olive oil, or coconut oil and put heat onto a medium-low setting
-Place Ezekiel bread coated with egg in pan and let cook for about 4 minutes each side
-Sprinkle cinnamon and smear some almond butter OR use toppings of your choice



Healthy snacks are a must on our 3 mile walk on the Bronx River Path each Sunday.  I need to bring an assortment of food for Luna’s munching pleasure.  Today, I brought with us an organic banana; a container of mixed organic nuts containing almonds, hazelnuts, walnuts, pumpkin seeds, and cashews; Lara Bar- Apple Pie flavor, GimMe roasted seaweed, and Newman’s organic pretzels.  All these snacks are easy to bring on-the-go, for work or travel – all healthy – all organic – NO EXCUSES to grab crap!


 Our Sunday afternoon ended up at the Bruce Park playground in Greenwich, CT, meeting Grandma and Grandpa on Luna’s father’s side.  Luna LOVES her Grandpa, one of her favorite people in the world!  This playground is amazing and I have yet to see another like it.  It’s huge with rubber mat covering the ground, so your child doesn’t get hurt; it has innovative activities for children that help develop their motor skills, balance and agility. This playground is definitely a thumbs up from me!
