Organic Raw Nut And Date Balls

Sunday mornings are no different for me than any other morning.. no sleeping in for this momma!  At 6:30am, Luna and I were making a batch of raw date and nut balls.  Healthy, delicious and easy to make for toddlers and adults.

Here’s the recipe:


2 cups Medjool dates 

1/2 cup organic raw walnuts

1/2 cup organic raw almonds

1 1/2 cups organic shredded coconut

1 teaspoon organic ground cinnamon

1/2 teaspoon organic pure vanilla extract or 1/2 vanilla bean ground


Place nuts in a small bowl or large glass and add distilled water until nuts are covered, soak overnight

Next day, drain nuts and let sit

Remove pit in dates and place in a bowl, pour boiling hot water into bowl until entire dates are submerged, let sit for 30 minutes then drain

In a processor, add nuts and pulse until finely chopped

Add 1/4 cup shredded coconut, cinnamon, vanilla, and pulse until mixed well

Add soaked dates, a little at a time, processing until you have a paste

Place remaining shredded coconut into a bowl, roll paste into small balls and coat with shredded coconut, place on parchment paper or a large flat container to freeze in (I used a large glass pyrex container)

That’s it!
