Quick, Easy Snack! Plantains, Better Than Potatoes Or Bananas?

Why eat plantains?  They are definitely a far better choice than potatoes and can often be substituted in their place.  Sometimes they are even a better choice than bananas.

Here are some of the benefits of plantains:

1 – Plantains contain more Vitamin A than bananas.  Vitamin A is a powerful antioxidant, maintains healthy mucous membranes, plays a vital role in the visual cycle, and enhances skin complexion.

2 – Rich source of B-Complex Vitamins, especially B6.  B6 is beneficial in the treatment of neuritis, anemia, and decreasing the causes for coronary artery disease.  

3 – Contains more potassium than bananas.  Potassium helps control heart rate and blood pressure, countering the negative effects of salt.

4 – Contains fiber which can lower your cholesterol level,  reduce your risk of heart disease, and helps regulate blood sugar levels.

5 – Good source of Vitamin C, niacin, phosphorus and magnesium.  Magnesium is necessary for bone strengthening and has a protective role in the cardio vascular system.

6- Contains small amounts of calcium, iron, folate, and Vitamin K

 

I decide to make plantains the other day for the first time.  Quick, easy and most importantly YUM!  This is how you do it…

* Slice 1 plantain into thin circles

* Coat pan generously with coconut oil 

* Place heat on medium-high

* Place all circle in pan and cook until both sides are golden brown

* Remove plantains and place on paper towel to drain

* Optional – smear your favorite nut butter and sprinkle with cinnamon OR spice it up with cayenne pepper 

 

** FOR BABIES: Great first food because it’s soft and can be easily mashed raw or cooked.  Great first finger food too! **
