Healthy Pancakes

Who doesn’t like pancakes?!?! They are a great treat, comfort food and a favorite breakfast choice.  These pancakes don’t have to be a treat anymore because they are super healthy and super clean.  I actually made these for dinner tonight… It was 8:00pm and I had not eaten dinner, so this was quicker than quick to make.  Of course, Luna (now 2 1/2yrs) ate some too! 

Place all of the following organic ingredients in a blender:

* 4 eggs whites

* 1 whole egg

* 1 banana sliced

* 2 tablespoons of oat bran ( I use Bob’s Redmill)

* 3 tablespoons of rolled oats (Bob’s Redmill)

* 1 scoop protein powder of choice – Optional

Coat pan with coconut oil and pour batter into pan.  Cook until both sides are golden brown. 

Makes 4 medium sized pancakes.
