Banana, Oat and A Whole Lot More Muffin

Yesterday, was a rainy day here in New York.  I decided to experiment a little with Luna’s help.  I came up with this version of a banana-nut muffin…

 
All ingredients organic and chemical free

1 cup rolled oats
1 cup oat bran
1/2 cup coconut flour
2 egg whites
2 ripe mashed bananas
1 1/2 cup cashew milk (can be any nut milk)
1 teaspoon cinnamon
1 teaspoon vanilla extract
1 1/2 teaspoon baking powder
1 teaspoon baking soda
4 tablespoons raw agave

Raw almond butter or nut butter of choice
Coconut oil to grease cups

Walnuts – optional or up to you how much you want to add.  I added a handful

 

Preheat oven to 375 F

Mix all ingredients except almond butter in a bowl. If it’s too thick, add more nut milk.

Fill cups half way with batter and put a teaspoon of almond butter in the middle. Fill the rest of the cups with batter.

Place in oven for 10 minutes and eat!
