Who doesn’t like chocolate chip cookies!? When staying away from processed foods and keeping my child on a healthy regiment, a little creativity comes into play. Still keeping it easy, simple and tasty!
Ingredients:
1 can organic garbanzo beans ( I use Eden Organics or 365 carton)
1/2 cup of organic raw almond butter (you can use nut butter of choice)
2-3 tablespoons of organic raw blue agave (you can make it sweeter if you like)
2 teaspoons organic vanilla extract
1 organic egg white
2 tablespoons of cashew milk (you can use nut milk of choice)
1/2 teaspoon of organic baking soda
Raw cacao nibs (I use Navitas)
Directions:
Preheat oven 350 F
Mix all ingredients except cacao nibs in a food processor until smooth
Slowly add to mixture as much cacao nibs as you want
Place spoonfuls of mixture onto cookie sheet or parchment paper
Bake for 13-15 minutes
