Homemade Almond Milk, Healthy Oatmeal Cookies And Mom’s Birthday

Avoiding dairy, have allergies, tired of preservatives like carrageenan in store bought nut milks?!  Well, here’s an easy way to make a homemade nutritious, great tasting alternative.  Homemade almond milk is low in fat, but high in energy, proteins, lipids and fiber. It contains nutrients like calcium, iron, magnesium, phosphorus, potassium, sodium, and zinc.  Almond milk also contains Vitamin C, B-6, thiamine, riboflavin, niacin, folate and vitamin E.  Great for bones, eyes, immune system, cancer fighting, and boosting immune system.

ALMOND MILK

Recipe:

1 Cup of organic raw almonds – soaked overnight (can be soaked up to 24hours)

3 Medjool dates

1/4 teaspoon nutmeg or cinnamon or both – up to you

4 cups water (more or less depending on how thick you want it)

Directions:

Drain water from almonds and rinse them

Add all ingredients to high speed blender and blend for 2-3 minutes

Place nut bag or cheese cloth folded a few times over a glass container and pour milk in to strain

Squeeze bag until all milk is emptied

That’s it!

 

Those who know me know that I am always trying to think of ways to substitute healthy treats in place of the sugar filled store bought ones.  I’m thinking ahead and preparing myself for when Luna does ask for cookies and treats – ugh… But I am loading up my arsenal, slowly but surely.  These are also great for babies around one year, when they have enough teeth to chew, because these are super soft.  Here’s a simple and yummy recipe for the kids and yes, us grown ups too!

OATMEAL COOKIES
Recipe:

1 1/2 cup organic rolled oats – I soaked them overnight, but that’s optional

2 ripe organic bananas

1 egg white

1/4 cups organic raisins

Pinch of cinnamon

Directions:

Preheat oven 350F

Completely drain water from oats

Mash bananas

Add all ingredients into a bowl and mix

Place a spoonful of mixture about an inch apart on parchment paper or if using a baking sheet grease with coconut oil

Bake for 15-20 minutes

Eat up!

 

Last but not least, a celebratory day of my mom’s 80th Birthday! In the middle picture, my mom is the little girl standing on the chair with my Grandmother holding one of my Aunts.  Love these old pictures.  It’s hard to believe my mom is 80 – she walks everywhere, miles upon miles a day; eats that good old Mediterranean diet – yup, olive oil, bread, tomatoes, etc.; carries groceries home from the store – multiple bags most of the times because she wants too; and most importantly takes care of my daughter Luna while I work.  She is Luna’s light and love.

 

We all went out for Hibachi, my brother – one of Luna’s favorite people on Earth, his girlfriend, her daughter and me.  My mom loves the cooking show and it was Luna’s first time experiencing it.  It was fun and Luna was great! We then continued back home to celebrate with an amazing gluten free trio mousse cake form Martine’s Bakery in Scarsdale. Fun was had by all!
