Tempura! The Deliciously Healthy Way

Quickie addition to any dinner! Takes 15 minutes- that’s it! I normally use baby zucchini and tonight I added yams. So delicious and the best part is my little three year old gobbled it all up! 👌👍😍

🍠All ingredients organic
🍠1 yam
🍠1 egg white
🍠1 cup whole wheat bread crumbs (you can substitute GF ones if needed)
🍠1/4 teaspoon garlic powder
🍠1/4 teaspoon onion powder
🍠Preheat oven to 400F
🍠Place egg white in one dish
🍠Place bread crumbs, garlic powder and onion powder in another dish; mix
🍠Slice yam into circles about 4cm thick
🍠Dip yam circles into egg white, let excess drip off and coat with bread crumbs
🍠Place on an aluminum tray or foil
🍠Bake for 15 minutes

🍠If using zucchini too, then simply cut in half lengthwise and cut the halves in half and dip into egg white and then bread crumbs

🍠EAT UP AND ENJOY BEING HEALTHY!

Zucchini Tots, Healthy Apple “Pie” And Arts n’ Crafts

❄️Hope you all ware having a great weekend! Freezing here in NY! I had a few zucchini on hand and decided to make these yummy bites! I wasn’t going outside anymore! Brrr!

🌱Zucchini Tots🌱
🔸3 small organic zucchini grated
🔸2 organic eggs
🔸1/2 cup organic sweet onion, minced
🔸1/4 cup organic Monterey Jack cheese
🔸1 slice Ezekiel bread grated into crumbs
🔸1 tablespoon imported parmesan cheese
🔸Pinch of Himalayan sea salt & pepper
〰〰〰〰〰〰〰〰〰〰〰〰〰〰
🔸Preheat oven to 400F
🔸Squeeze water out of grated zucchini
🔸Mix everything in a bowl
🔸Scoop out 1,tablespoon of mixture, then in your hands roll into balls
🔸Place on baking sheet (I greased each spot where I placed tots with coconut oil)
🔸Bake for 10 minutes and flip, cook another 10 or until golden brown
🔸Use condiments of choice to dip in

 

🍏Hot and Healthy Apple Something

Happy Superbowl Sunday ! Here’s a treat that’ll satisfy that sweet tooth and is pretty good for you – it’s made out of apples! 😉 

🍏Apple Something🍏
🔹All ingredients organic
🔹3 Apples sliced
🔹1 cup almond meal
🔹3 tablespoons coconut sugar
🔹2 tablespoons shredded coconut
🔹1 teaspoon cinnamon
🔹1 teaspoon nutmeg
🍏Preheat oven to 350F
🔹Mix all ingredients in a baking dish
🔹Cover with tin foil
🔹Bake for 45 minutes
🍏Serve with some Forte Gelato protein ice cream! 😁😋😱

And what else do you do with a kid inside?! Yep, arts and crafts… Pulled out a Christmas present to occupy Luna.  A ceramic butterfly bank to paint all on her own.  She loved it and was completely content.  Luna carries this butterfly everywhere in the house!

Zucchini Fries

You know me; always looking for healthy snacks, foods, meals… Here’s an incredibly delicious, crunchy, flavor filled dish!  This is kid friendly, filled with vitamins, minerals, antioxidants, anti-inflammatory properties, helps regulate blood sugar, has antimicrobial benefits, and even supports prostate health.

🌟Zucchini Fries!🌟

🍟All ingredients organic
🍟2 Zucchinis cut in half lengthwise then cut again lengthwise into 1/2 inch sticks
🍟2 egg whites
🍟1/4 cup whole wheat bread crumbs or process Ezekiel bread into crumbs or use your choice
🍟1 tablespoon imported parmesan cheese
🍟1/4 teaspoon garlic powder
🍟1/4 teaspoon onion powder
🍟1/4 teaspoon dried parsley
🍟1/4 teaspoon dried thyme
🍟Pinch of Himalayan sea salt

🌟Preheat oven to 425F
🌟Beat egg whites in one dish
🌟Mix dry ingredients in a separate dish
🌟Dip zucchini entirely into egg
🌟Then dip into breadcrumb mixture
🌟Place sticks on parchment paper
🌟 Bake for 15-20 minutes

**You can use dips such as hummus and guacamole

Favorit Snack, Luna’s Lunch And More

Snacks are a MUST with me because I am ravenous all the time… I’m constantly on the go and NEVER sit down.  I love my nut butters!  Of course, in moderate  amounts because it is high in fat.  This snack above is one of my favorites – Lundberg organic brown rice crackers and Novelle Naturals walnut butter.  One cracker and a half tablespoon of walnut butter satisfies me for a short while – great snack that helps keeps your insulin levels even, avoiding a spike which causes cravings!

 

Luna’s lunch today was about a 2 oz turkey burger made from Organic Plainville ground turkey, Tolerant red lentil penne, steamed organic broccoli and avocados in tomatoes in Bragg apple cider vinegar that’s not shown.  She ate ALL of it and then had my homemade coconut yogurt.  She is an amazing eater – it truly pays off to eat healthy during pregnancy and instill healthy values from when a child is born.  Luna loves all the foods that I ate while I was pregnant and that I eat now – healthy, wholesome foods that are all organic.

 

Back at the Greenburgh Nature Center today.  Teaching Luna how a zucchini grows and that it’s NOT ready to be picked just yet – yikes!  I introduce Luna to as much as I can no matter what it may be –  nature, a growing garden,  animals of all types, the world that’s out of the normal box and in it.  I keep myself as healthy as I possibly can and keep my mind sharp, open and always willing to learn and expand… Why? Because I am Luna’s role model and example.

Baby Zucchini

Baby zucchini, also know as courgettes, are often forgotten about when it comes to baby foods.  This squash is tender enough to roast & purée with the skin for infants and is easily sliced & roasted with olive oil.  A tasty, healthy snack for my VERY active toddler.  

I simple take a baby zucchini, wash, slice, brush olive oil on both sides, place on baking sheet and roast at 300F degrees for about 10 minutes or until the start of a light brown color appears.  I actually use the toaster oven.  Pretty damn easy!

Not only is this easy, this zucchini contains folate, antioxidants, potassium, vitamin C, beta carotene, moderate levels of B complex vitamins, iron, phosphorus, manganese, and zinc.  Pretty good for that baby of yours and you too!
